The original tetralogy tells one continuous story and release order doubles as story order for those four films; two prequels made years later are set decades earlier in-universe but were written as prequels reflecting back on the world Katniss inherits, so they're best watched after the originals, in the order they were released.

Where to start if you only have a weekend
Watch the original film alone — it's a complete story and the franchise's best entry point. If it clicks, Catching Fire is a straight improvement and worth the immediate follow-up; the prequels can wait.
